
Samp is a staple dish amongst South Africans with many variations. However today we gonna be making the very basic version.
Wash your samp.
Once washed place your samp and in bowl and soak overnight. (Soak in 1L of cold water)
Drain your samp and and place in pot.
Add boiling water to your samp. (add enough water to cover your samp)
Bring to boil. Once boiling reduce heat and allow to simmer for 1½hours or until nearly soft. Stir every 30 minutes. Add water while cooking if necessary.
Add your oil, onion and green pepper and fry until soft.
Add your curry powder and fry for another 2 minutes on low heat.(stir continuously)
Add your fried onions and green pepper to your samp.
Add your Aromat and margarine to your samp and stir well. (add water if necessary)
Allow to simmer for 45 minutes.(stir occasionally – you should get a creamy texture)
Serve hot and enjoy!
