
Tripe, commonly known as usu or mogodu locally in South Africa, is a staple dish within the Zulu culture. We hope you enjoy our simplified recipe.
Clean your tripe thoroughly and chop into bite size pieces.
Add your tripe to pot. Add enough water to cover your tripe and bring to boil. Once boiling reduce heat and allow to simmer for 2 hours with the pot closed.
Add your onion, green pepper, stock cubes and salt. Allow to simmer for another 45 minutes. (stir pot every 15 minutes)
Serve and enjoy hot!
