
Great side dish for vegetarians
Cut off the to stem of the butternut and discard of it, slice your butternut into thick rings to make it easier to peel. Scoop out the seeds with a spoon, use a peeler or a knife to peel off the skin off the butternut.
When done peeling cut your butternut into cubes and place it in your pot. Add enough water to cover half of your butternut and bring to boil.
Once boiling reduce heat and simmer for 30 minutes or until soft. Drain out water as much as possible then mash your butternut until smooth. Add your sugar and margarine, mix it together.
Serve and enjoy!
